Silky Chocolate Mousse with Macerated Strawberries

Macerated Strawberries:
  • 250g fresh strawberries, diced into small cubes
  • 100g castor sugar
  • Small pinch salt flakes

  • 500g high quality chocolate, broken into pieces
  • 8 egg whites
  • 8 egg yolks
  • 100ml full cream, lightly whipped
  • 100g castor sugar
  • pinch of salt

Macerated Strawberries    

  1. Place strawberries in a wide, heavy based pot. Sprinkle the sugar and salt over the strawberries and set aside for 10-15 minutes.
  2. Cook the strawberries over a moderate heat for approximately 10 minutes, ensuring the colour of the fruit stays red and does not brown.
  3. Cover and set aside while the chocolate mousse is prepared.

Instructions

Silky Chocolate Mousse

  1. Melt the chocolate slowly and carefully.
  2. Add the egg yolks one by one, mixing each in well before adding the next.
  3. Beat in the cream, then set aside to cool down to room temperature.
  4. Whisk the egg whites with a pinch of salt until stiff.
  5. Gradually add the caster sugar, beating well between each addition.
  6. Carefully fold into the chocolate mixture, then allow to set in the refrigerator for 4-6 hours.
  7. Serve the mousse in individual glasses or plates, topped with a spoonful of the macerated strawberries.
