Kiwi Rubbed Lamb Leg Simon Gault 16 June 2015 Ingredients Ingredients 1 leg of lamb on the bone (approx 2.2kg) 6 large agria potatoes, washed skin on Generous shake of Simon Gault Home Cuisine Kiwi seasoning to taste 70ml olive oil Ingredients Instructions Instructions Preheat an oven to 200°C. Using a fork scrape the potatoes lengthways completely scratching the potatoes all over. Place onto an oven roasting tray and drizzle with 30ml of the olive oil, then sprinkle generously with the Simon Gault Home Cuisine kiwi seasoning. Instructions Then rub the remaining olive oil onto the lamb leg and sprinkle again generously with the Simon Gault Home Cuisine kiwi seasoning (20 -30 grams) and place on top of the potatoes. Place into the oven and roast for 120 minutes to achieve an internal temperature of 58°C. Remove from the oven and allow to rest for 15 minutes before carving.
