Tomato Salad with Indian Dressing Simon Gault 04 June 2015 Ingredients Ingredients 2 tbsp Simon Gault Home Cuisine Indian seasoning 1 tsp water 1 tsp malt vinegar 2 tbsp olive oil ½ large telegraph cucumber 1 cup small red vine ripened tomatoes, cut in half 1 cup yellow cherry tomatoes, cut in half 12 large basil leaves, roughly chopped Ingredients Instructions Instructions In a mixing bowl place the Simon Gault Home Cuisine Indian seasoning and whisk in the water to make a paste. Pour in the vinegar and whisk, then slowly whisk in the olive oil to complete the dressing. Instructions Cut the cucumber length ways into quarters and then roughly chop into pieces about the same size as the tomatoes. Place the cut cucumber into the finished dressing along with the tomatoes, add basil and mix with a spoon. Transfer to a serving bowl and serve.
